"Otsa Lotsa Matzoh "

Passover begins tomorrow and I love matzoh!
Thought I'd share a recipe for Matzoh Brei which is like matzoh-scrambled eggs.

Yields: 1 servings (I make more servings-adding more matzo & eggs or egg whites)

"For a sweet Passover brunch dish serve this simple egg and matzo fry with cinnamon sugar or jelly. For a savory variation, use salt and pepper in the egg mixture."

INGREDIENTS:
1 matzo cracker
1 egg
salt and pepper to taste
1 teaspoon vegetable oil

DIRECTIONS:
1. Take the matzo and break into small pieces into a bowl. Cover with hot water for a minute. Then drain / squeeze out the water.

2. In a small bowl, beat one egg with salt and pepper to taste and add to matzo. Mix well.

3. Heat frying pan with a little oil. Pour mixture into the pan. Brown one side and turn over.
